Chocolate Zucchini Bread

  • Yield 24 servings


3 -- eggs, beaten
2 cups sugar
1 cup vegetable oil
4 tablespoons cocoa
1 teaspoon vanilla
2 cups grated zucchini
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon baking powder


Mix beaten eggs,oil and cocoa.

Add vanilla and zucchini and mix.

Sift remaining ingredients together in another bowl and add to zucchini mixture in batches blending completely between additions.

Lightly grease 2 loaf pans, pour batter into pans.

Bake @ 350 for 50-60 minutes. Cool 10 minutes and then invert on rack.

Optional toppings: sprinkle with confectioners sugar or cream cheese frosting.


Can be made as muffins (watch baking time) or in a large bundt pan.
