You are here: Home » Recipes » Chocolate Zucchini Bread Chocolate Zucchini Bread Recipe by goldengirl Yield 24 servings PrintEmail Ingredients 3 -- eggs, beaten2 cups sugar1 cup vegetable oil4 tablespoons cocoa1 teaspoon vanilla2 cups grated zucchini3 cups flour1 teaspoon salt1 teaspoon baking soda1 teaspoon cinnamon1/4 teaspoon baking powder Instructions Mix beaten eggs,oil and cocoa. Add vanilla and zucchini and mix. Sift remaining ingredients together in another bowl and add to zucchini mixture in batches blending completely between additions. Lightly grease 2 loaf pans, pour batter into pans. Bake @ 350 for 50-60 minutes. Cool 10 minutes and then invert on rack. Optional toppings: sprinkle with confectioners sugar or cream cheese frosting. Can be made as muffins (watch baking time) or in a large bundt pan.
