Chocolate Sherry Cream Bars

  • Yield 36 to 48 servings

A delicious chilled dessert, perfect for a hot summer day.

Ingredients

4 ounces baking chocolate
1 cup butter
4 -- eggs
2 cups sugar
1 cup sifted flour
1/2 teaspoon salt
1 teaspoon vanilla extract
4 cups confectioners' sugar
1/2 cup butter
1/4 cup cream
1/4 cup dry sherry
1 cup chopped walnuts
1 -- (6-ounce) package chocolate chips
3 tablespoons water
1/4 cup butter

Instructions

  1. Melt the baking chocolate and 1 cup butter in a bowl over boiling water, stirring to mix well.  Beat the eggs in a mixer bowl until light and pale yellow.  Add the sugar gradually, beating well after each addition.  Add the chocolate mixture, flour, salt and vanilla. Beat for 1 minute.  Pour into a greased and floured 10×14-inch baking pan.  Bake at 325F for 25 minutes.  Remove from the oven; cool.  Cream confectioners' sugar and 1/2 cup butter in a mixer bowl until light and fluffy.  Add the cream and sherry gradually, beating well after each addition.  Fold in the walnuts; mix well.  Spread over the baked chocolate layer.  Chill.  Melt the chocolate chips with the water and 1/4 cup butter in a bowl over boiling water; mix well.  Drizzle the mixture over the filling.  Chill until firm before cutting into bars.
