Chocolate Pudding Cake with Raisins

Ingredients
- Batter:
- 2tablespoons butter
- 3tablespoons sugar
- 1 egg
- 1 1/3cups flour
- 3tablespoons cocoa
- 1 3/4teaspoons baking powder
- 1/4teaspoon baking soda
- 1/4teaspoon salt
- 2/3cup milk
- Syrup:
- 3cups water
- 2cups sugar
- 4tablespoons butter
- 1cup raisins
Instructions
- Batter: In a bowl cream together softened butter and sugar , add egg and beat.
- Add sifted flour, cocoa, baking powder, baking soda, salt, and milk. Beat by hand or electric mixer until blended.
- Syrup: In a covered saucepan place water, sugar, butter, and raisins, and bring to a rapid boil. When syrup boils, add batter by tablespoons to the mixture and cover with lid. Then when steam escapes, turn heat to simmer and continue cooking 30 to 35 minutes. Do not remove cover after batter is in the saucepan.
- Serve hot, cool, or cold. Always good with whipped cream or vanilla ice cream.
