Chocolate Oreo Cheesecakes

Ingredients

16 ounces cream cheese
2/3 cup granulated sugar
1 tablespoon unbleached flour
2 -- eggs
2 tablespoons Kahlua
1 cup mini semi-sweet chocolate chips, divided
12 -- Oreo cookies - original style

Instructions

  1. Bring cream cheese to room temperature.
  2. Preheat oven to 325 degrees
  3. Combine cream cheese, sugar and flour in medium to large bowl.  Mix well with an electric mixer.
  4. Add eggs, one at a time; mixing well after each.
  5. Stir in Kahlua.
  6. Melt 1/2 cups chocolate chips in microwave on low power  until chips start to lose shape.  Stir until smooth.
  7. Stir melted chocolate into batter; mixing well. 
  8. Stir 1/2 cup unmelted chocolate chips into batter until uniformly distributed.
  9. Place one Oreo in the bottom of each of 12 foil cupcake cups.
  10. Using a spoon, fill each foil cup with cheesecake batter. Cups will be very  full.
  11. Bake at 325 degrees 25-30 minutes or until set. 
  12. Chill at least one hour.
  13. Frost with whipped cream. 
  14. Serve cold.
