PrintEmail Ingredients Brownies:1/2 cup (1 stick) margarine2/3 cup cocoa1 1/2 cups sugar1 large egg2 large egg whites1 1/2 cups all-purpose flour1/4 cup nonfat plan yogurt1 tablespoon vanilla extract1/2 teaspoon peppermint extractMint Frosting:3 tablespoons light cream cheese, softened1 tablespoon light stick margarine, softened2 cups confectioners' sugar1/2 teaspoon peppermint extract Few drops of green food coloring Instructions Preheat oven to 350F. Coat a 15x10x1-inch baking sheet with nonstick cooking spray. To prepare brownies: In a small saucepan or in the microwave, melt margarine with cocoa over low heat. Transfer melted chocolate mixture to a mixing bowl. Add sugar, egg and egg whites, beating well. Add flour alternately with yogurt. Add vanilla and peppermint extracts. Pour into baking sheet and bake 15 minutes, or until a toothpick inserted in the middle comes out clean. Do not overbake. To prepare the frosting: In a mixing bowl, blend cream cheese and margarine until creamy. Gradually add confectioners’ sugar, mixing until smooth. Add peppermint extract and green food coloring. Spread over top of cooled brownies and cut into squares.
