Chocolate Chip Date Cake
- Yield 12 pieces
- 8 ounces pitted dates, cut up into small pieces
- 1 1/2 cups boiling water
- 1 1/2 sticks butter or margarine
- 1 cup sugar
- 2 -- eggs
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 2 tablespoons cocoa
- 1/2 teaspoon salt, optional
Add the chopped dates to the boiling water, stir and set aside to cool.
Cream the butter and sugar until fluffy. Add eggs to mixture.
Add cooled date mixture to the creamed ingredients and vanilla.
Mix the dry ingredients in a separate bowl, flour, soda, cocoa and salt.
Add to the liquid mixture.
Pour into a greased 9×13 pan and sprinkle with the following topping.
Topping: 1/2 cup sugar
6 ounces chocolate chips
1/2 cup chopped pecans
Bake in a preheated 350 F oven for 35-40 minutes
