Chipotle Cranberry Barbecue Sauce
- Yield 2 1/2 cups
A sweet, spicy barbecue sauce that's great for grilled chicken and pork.
- 2 teaspoons chopped fresh ginger
- 1/2 cup chopped onions
- 1 garlic clove
- 1 tablespoon olive oil
- 1 cup catsup
- 1 cup cranberry sauce
- 2 tablespoons red wine vinegar
- 2 tablespoons chipotle powder
- 1 teaspoon black pepper
- 1/4 cup fresh lime juice
- Saute ginger, onions and garlic until tender, but not browned. Combine remaining ingredients in food processor with ginger/onoin/garlic mixture. Process until smooth. Refrigerate until ready to be used. Brush on meat in the last 15 to 20 minutes of cooking.
