Chipotle Chili, Tomato and Apple Salsa

Serve this with chips and crackers or as a sandwich spread. Canned chipotles in adobo are pretty spicy so you may want to only use one.1 or 2 chipotle chilies in adobo sauce, minced with 1 tablespoon sauce from can.
- 1/4 red onion, minced
- 1/2 green bell pepper, cored, seeded and chopped
- 1 ripe tomato, chopped roughly
- 1 Granny Smith apple, cored, peeled and chopped
- 1/4cup chopped cilantro
- Juice of 1 lime
- pinch kosher salt
- Combine all ingredients.
