PrintEmail Ingredients 3 cups chilled cooked rice, no salt added2 tablespoons golden raisins2 tablespoons chopped parsley1 Granny Smith apple, chopped in bite-size pieces1/4 cup chopped toasted pecans1 green onion, minced (including green portion) Salad greens for garnishDressing:3 tablespoons olive oil1/3 cup defatted chicken broth, less salt1/3 cup red wine vinegar1 tablespoon fresh lemon juice1 garlic clove, minced1 tablespoon sugar1 teaspoon curry powder1/4 teaspoon salt1/8 teaspoon freshly ground black pepper dash red pepper Instructions Mix together salad ingredients. Chill. Combine dressing ingredients. Just before serving, dress and toss salad.
