Chicken Wrapped Rellenos

4 -- chicken breasts
3 -- 4 poblano peppers
2 cloves garlic
1 small onion
1 can diced tomatoes with green chiles
1 pound chorizo sausage
1 cup pepper jack cheese or monterey jack cheese
1 tablespoon cumin
1 tablespoon cajun seasoning
1 -- tablespooon brown sugar
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon olive oil
1 can creamed corn
1 package corn bread
1/2 cup cream
1/2 package cream cheese
1 tablespoon butter


preheat oven to 400 degrees
1. Pound out chicken breasts until they are between 3/4 to 1 inch think.
2. Slice chicken breasts so that they may be stuffed
3. mix cumin, cajun seasoning, salt, black pepper, and brown sugar with olive oil to create spice mixture
4. Spread spice mixture inside and outside of chicken breasts
5. clean and cut poblano peppers into quarters
6. coat peppers in olive oil and pan sear on high teperature for 2 minutes each side
7. stuff chicken with 1/4 poblano, some chorizo sausage, 1/4 cup jack cheese, and another 1/4 poblano
8. mince garlic
9. chop onions
10. saute garlic and onions on med temp in 1 tablespoon olive oil
11. add drained tomatoes with green chiles and simmer for 5 minutes
12. add 1/2 pkg. cream cheese to sauce-like mixture
13. reduce heat and make sure cream cheese is thoroughly combined
14. melt 2 tablespoons butter and sear chicken on med high heat on each side for 2 minutes each side
15. cook on 400 degrees for 20 minutes until sausage and chicken is thoroughly cooked
16. prepare cornbread with 1/2 cup cream and add can of creamed corn and cook according to package instructions
17. serve chicken with tomato cream cheese sauce and slice of cornbread
