Chicken Taco Casserole

  • Yield 6 servings


1 pound Chicken
1 can Mexicorn
1.5 cups Rice
1.5 cups water
1 can Rotel
1 packet Taco Seasoning
1.5 cups ShreddedColby Jack


Brown chicken in a large skillet.  Stir in Mexicorn, Rotel, Rice,  water, and taco packet.  Bring to a boil.  Lower heat to simmer.  Top with cheese and cover.  Allow cheese to melt and serve with tortilla chips.
