Chicken with Proscuitto, Asparagus and Brie

- 4 small boneless, skinless chicken breasts
- 1/2 -- lb prosciutto
- 1/2 -- lb asparagus, cleaned and steamed
- -- Salt and Pepper to taste
Cut a pocket into chicken breast, being careful not to slice all the way through.
Wrap 3 asparagus spears together with 2 pieces of prosciutto. Stuff the prosciutto-wrapped asparagus and brie inside the pocket. Secure pocket closed with toothpicks. Sprinkle with Salt and Pepper (to your taste). Repeat for each remaining breast. Brown chicken in pan sprayed with cooking spray on all sides. While browning, heat oven to 350. Once seared on all sides, place entire pan in oven to finish (10-15 minutes, test for doneness, careful not to overcook as it will dry out chicken).
