Chicken Spanish Rice

  • Yield 4-6 servings


1 cup Long Grain Brown Rice
1 small Sweet Onion diced
1 large Green Pepper diced
2 -- Celery Stalks diced
1 large can Crushed tomatoes No Salt added
1 medium can Diced tomatoes Any spice No Salt dded
4 - 6 pieces Boneless Chicken or Chicken Sausage


Preheat oven to 350 degrees  –  Bake for 11/2 – 2 hours  Til rice looks done

Combine Rice, Crush Tomatoes & Dice Tomatoes – add rest of ingredients – mix together well – Put meat on top of rice mixture.
