Sesame Chicken Burgers with Ginger Mayo

- 2pounds ground chicken
- 2-- egg whites,slightly beaten
- 2tablespoons soy sauce
- 2-- teaspoon. sesame oil
- 1teaspoon rice wine vinegar
- 1teaspoon white pepper
- 1teaspoon ground ginger
- 2-- garlic cloves,minced
- 2-- scallions,chopped
- 1/2teaspoon ground red pepper
- 1cup panko bread crumbs
- 3/4cup sesame seeds
- 3tablespoons peanut oil
- 2/3cup mayonnaise
- 3/4teaspoon ground ginger
- 1teaspoon soy sauce
- 6-- split white hamburger buns
- 6-- leaves, red tip leaf lettuce
Heat oven to 400* F.
In a large bowl combine the ground chicken,egg whites,soy sauce,sesame oil,vinegar,white pepper,chopped scallions,ground ginger,minced garlic,red pepper and panko bread crumbs.Mix until combined,do not over mix.
Make 6 equally sized patties.Pour sesame seeds onto a plate and coat the patties with the seeds on both sides.
Heat 3 tbls. peanut oil in a non stick skillet set on medium to medium -hi heat. Cook patties for 2-3 minutes per side or until golden brown making sure not to burn seeds.
Place patties on a cookie sheet and place in pre heated oven fore 15 minutes or until internal temp. reaches 165*F.
While patties are in the oven combine the mayonnaise,ginger and soy sauce in a bowl.Set aside.
Spread mayonnaise on cut sides of buns.Place lettuce leaves on bottom buns and top with chicken sesame patties.Place top buns on patties.
