Chess Pie Squares

  • Yield: 2 dozen


1cup flour
1/2cup (1 stick) butter, softened
3tablespoons sugar
1cup packed brown sugar
1/2cup sugar
1tablespoon flour
3-- eggs, lightly beaten
3tablespoons butter, melted
1/2teaspoon vanilla extract
-- Chopped pecans (optional)


  1. Combine 1 cup flour, 1/2 cup butter and 3 tablespoons sugar in a bowl and blend well.  Press evenly in an 8 x 8-inch baking pan.  Bake at 350F for 15 to 20 minutes or until light brown.  Combine the brown sugar, 1/2 cup sugar and 1 tablespoon flour in a bowl.  Add the eggs and mix well.  Stir in the melted butter gradually.  Add the vanilla and mix well.  Pour over the baked crust.  Sprinkle with pecans, if using.  Bake at 350F for 25 to 30 minutes or until light brown and set.  Cool completely.  Cut into squares.
