You are here: Home » Recipes » Cathy’s Broccoli Casserole Cathy’s Broccoli Casserole Recipe by hockcat Yield 12 servings PrintEmail Ingredients 32 ounces frozen chopped broccoli or broccoli cuts1 can cream of mushroom soup1 cup cubed Velveeta Cheese1 cup mayonnaise2 eggs1 1/2 sticks real butter2 packages Ritz Crackers Instructions Boil broccoli in a small amount of water for 10 mins. Drain well. Mix together in a large bowl broccoli, cream of mushroom soup, Velveeta Cheese, mayonnaise and eggs. Pour into a 9″ x 13″ casserole dish. Melt butter and stir in crushed Ritz Crackers and spread evenly on top of casserole. Bake at 350 degrees for 45 mins.
