Cathy’s Broccoli Casserole

  • Yield 12 servings


32 ounces frozen chopped broccoli or broccoli cuts
1 can cream of mushroom soup
1 cup cubed Velveeta Cheese
1 cup mayonnaise
2 eggs
1 1/2 sticks real butter
2 packages Ritz Crackers


  1. Boil broccoli in a small amount of water for 10 mins.  Drain well.  Mix together in a large bowl  broccoli, cream of mushroom soup, Velveeta Cheese, mayonnaise and eggs.  Pour into a 9″ x 13″ casserole dish.  Melt butter and stir in crushed Ritz Crackers and spread evenly on top of casserole.  Bake at 350 degrees for 45 mins.
