Orange Chicken Lettuce Wraps with Cashews

1 pound ground chicken
1 tablespoon olive oil
2 tablespoons minced onion
1 teaspoon garlic salt
1 teaspoon ground ginger
1 teaspoon red pepper flakes
1 -- orange
1 -- red bell pepper diced
1/4 cup chopped cashews
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 -- head iceberg lettuce


Brown chicken in olive oil with onion, garlic salt, and ginger. Zest 1 teaspoon orange skin into chicken. Separate pulp in orange saving as much juice as possible. Add orange pulp, red pepper, and orange juice to chicken. Simmer until pepper is tender. Add cashews, hoisin sauce and soy sauce. Heat through for 2 to 3 minutes. Spoon chicken mixture into lettuce leaves.
