Carrot Muffins with Raisins and Walnuts

Raisins and walnuts stud these Carrot Muffins.
Ingredients
- 2-1/2 cup all purpose flour
- 1/2 cup dark brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground allspice
- 14 teaspoons ground nutmeg
- 1/4 teaspoon ground cloves
- 2 eggs
- 1 cup milk
- 1/2 cup butter or margarine
- 1 cup grated carrot
- 1/2 cup raisins
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 400F.
- Combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, allspice, nutmeg, and cloves in large bowl.
- In another bowl, combine eggs and milk. Stir egg mixture into flour mixture along with melted butter, carrots, raisins, and walnuts.
- Turn batter in into 12 greased muffin pan cups. Bake 15 to 20 minutes, or until a wooden pick inserted in the center comes out clean.
