Carrot Muffins with Raisins and Walnuts

Raisins and walnuts stud these Carrot Muffins.


2-1/2 cup all purpose flour
1/2 cup dark brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
14 teaspoons ground nutmeg
1/4 teaspoon ground cloves
2 eggs
1 cup milk
1/2 cup butter or margarine
1 cup grated carrot
1/2 cup raisins
1/2 cup chopped walnuts


  1. Preheat oven to 400F.
  2. Combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, allspice, nutmeg, and cloves in large bowl.
  3. In another bowl, combine eggs and milk.  Stir egg mixture into flour mixture along with melted butter, carrots, raisins, and walnuts.
  4. Turn batter in into 12 greased muffin pan cups.  Bake 15 to 20 minutes, or until a wooden pick inserted in the center comes out clean.
