Cardamom Couscous

Aromatic cardamom pods flavor this simple Israeli couscous.


1 tablespoon olive oil
1/2 medium onion, chopped
3 cardamom pods
1 teaspoon ground cumin
2 cups Israeli couscous
4 cups water or vegetable broth


  1. Heat oil in a medium saucepan over high heat. Add onions, cardamom pods and cumin and saute 3 minutes to soften.
  2. Add couscous and saute, stirring often to coat with oil and spices. Add 1 cup water and stir to combine with couscous. Cook, stirring, often until liquid is absorbed. Continue to add 1 cup liquid at a time and simmer stirring often until all liquid is absorbed and couscous is tender. Serve with Curried Spring Vegetables.
