Ingredients 1 cup thinly sliced celery1/2 cup chopped onion1 teaspoon vegetable oil1 1/4 cups long grain rice2 1/2 cups water2 teaspoons chicken bouillon2 1/4 teaspoons caraway seed1/4 teaspoon salt2 teaspoons Mrs. Dash seasoning blend1/2 cup sliced fresh mushrooms1/4 cup chopped bell pepper1 teaspoon lemon juice Instructions In a large kettle, saute celery and onion in oil until crisp-tender (about 2 minutes). Stir in rice, water, bouillon, caraway seed, salt, and Mrs. Dash. Bring to a boil, reduce heat, and simmer covered for 10 minutes. Add mushrooms and pepper. Cover and simmer for 10 minutes. Stir in lemon juice and fluff with fork. Tips From Our Test Kitchen: Mix green and red bell pepper for a more colorful rice dish. It lends nicely to stir-fry.
