Ingredients 1 tablespoon unsalted butter1 1/2 cups diced, peeled apple1 tablespoon packed dark brown sugar1 pinch ground nutmeg1 pint vanilla ice cream4 tablespoons jarred caramel topping, at room temperature4 teaspoons coarsely chopped lightly salted peanuts Instructions Melt butter in a large nonstick skillet over medium heat. Add apples, sugar and nutmeg. Cook, turning occasionally with a large spoon, 7 minutes or until golden brown and nearly tender. Place scoops of ice cream in individual serving dishes. Top with caramel topping, caramelized apples and peanuts.
