Candied Walnuts with Sprimp in Spicy Garlic Sauce
- Yield 4 servings
Shrimp is marinated in a simple, spicy sauce and then sauteed with bell peppers and onions for exciting flavor without the extra fat and mess of deep-frying.
Ingredients
- Spicy Garlic Marinade:
- 3 large garlic cloves, minced
- 1/4 teaspoon crushed red pepper (or to taste)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- Shrimp:
- 1 pound medium raw shrimp, shelled and deveined
- 3 tablespoons extra-virgin olive oil
- 2 medium bell peppers, any color, juilienned
- 1 small white onion, halved lengthwise and thinly sliced
- 1 teaspoon salt
- 1/4 teaspoon crushed red pepper (or to taste)
- 1/2 cup candied walnuts, to garnish
Instructions
- Combine marinade ingredients in a large bowl. Add shrimp and toss to coat. Cover and refrigerate at least 30 minutes.
- Heat a nonstick wok or saute pan over high heat and coat with 2 tablespoons oil. Add shrimp, reserving marinade. Saute until shrimp turms pink, about 2 minutes. Remove and place in a bowl.
- Recoat wok with remaining 1 tablespoon oil. Add peppers, onion, salt, red pepper and reserved shirmp marinade. Saute until peppers soften, about 1 minute. Return shrimp to wok, stir, and heat through. Garnish with candied walnuts. Serve hot with rice or pasta.
