Calypso Java Bread

  • Yield: 10 to 12 servings


3cups biscuit mix
3/4cup brown sugar
1/4cup all-purpose flour
1tablespoon instant coffee powder
1/2cup milk
1cup mashed (2) bananas
1-- beaten egg
1cup snipped dates
1/2cup chopped walnuts


  1. In mixing bowl combine biscuit mix, brown sugar and flour.  Dissolve coffee powder in milk.  Add all at once to dry ingredients with bananas and egg.  Beat until blended.  Stir in dates and nuts.
  2. Grease bottoms of two 1 pound coffee cans.  Divide batter between cans.  Bake in 350F oven for 50 minutes.  Loosen sides of loaves with spatula and remove from cans.
