Calypso Java Bread
- Yield 10 to 12 servings
Serve this bread at your next brunch.
- 3 cups biscuit mix
- 3/4 cup brown sugar
- 1/4 cup all-purpose flour
- 1 tablespoon instant coffee powder
- 1/2 cup milk
- 1 cup mashed (2) bananas
- 1 -- beaten egg
- 1 cup snipped dates
- 1/2 cup chopped walnuts
- In mixing bowl combine biscuit mix, brown sugar and flour. Dissolve coffee powder in milk. Add all at once to dry ingredients with bananas and egg. Beat until blended. Stir in dates and nuts.
- Grease bottoms of two 1 pound coffee cans. Divide batter between cans. Bake in 350F oven for 50 minutes. Loosen sides of loaves with spatula and remove from cans.
