California Mozzarella with Roasted Tomatoes

Ingredients

1/2 cup coarsely chopped oven-roasted tomatoes
1 tablespoon extra-virgin olive oil
2 teaspoons chopped mixed fresh herbs of your choice: select from oregano, Italian parsley, sage, tarragon and mint
Salt and freshly ground pepper, to taste
12 slices (2/3-ounce) California high-moisture Mozzarella (water-packed)
Fresh herb sprigs of your choice for garnish, if desired

Instructions

  1. In small bowl combine tomatoes, oil and chopped herbs. Season with salt and pepper. For each serving, plate 3 slices cheese. Top each cheese slice with a dab of tomato mixture. Garnish with herb sprigs.
