California Fig Layer Bars
- Yield 24 or 48 pieces
Serve these fig bars as a healthy snack or top with ice cream and chocolate syrup for a tasty dessert.
Ingredients
- Filling:
- 1 -- (8-ounce) package dried California figs, stemmed and chopped fine
- 1 cup sugar
- 1/2 cup chopped walnuts
- 1/2 cup hot water
- Crust and Topping:
- 1 cup brown sugar
- 1 cup butter
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1 3/4 cups rolled oats
- 1 3/4 cups flour, sifted
- -- Ice water, as needed
Instructions
- To prepare the filling. Combine the figs, sugar, nuts and water. Cook over medium heat 15 minutes or until thickened, stirring frequently. Cool.
- To prepare and crust and topping: Cream sugar, and butter until light and fluffy. Add salt, vanilla, oats and flour. Mix until blended. Spread and pat about half the flour mixture in the bottom of a lightly greased shallow pan (7 1/2 x 12-inch or 9 x 13-inch). Spread filling evenly over all. Sprinkle remaining flour mixture evenly on top; pat lightly. Bake at 350F for 25 to 30 minutes or until lightly browned. Allow to cool in pan.
- Cut 4×6 to make 24 large squares or cut 4×12 to make 48 bars to serve as snacks.
Serving Suggestions: Serve warm with ice cream and drizzle with chocolate syrup.
