California Fig Layer Bars

  • Yield 24 or 48 pieces

Serve these fig bars as a healthy snack or top with ice cream and chocolate syrup for a tasty dessert.


1 -- (8-ounce) package dried California figs, stemmed and chopped fine
1 cup sugar
1/2 cup chopped walnuts
1/2 cup hot water
Crust and Topping:
1 cup brown sugar
1 cup butter
1/2 teaspoon salt
1/2 teaspoon vanilla
1 3/4 cups rolled oats
1 3/4 cups flour, sifted
-- Ice water, as needed


  1. To prepare the filling.  Combine the figs, sugar, nuts and water.  Cook over medium heat 15 minutes or until thickened, stirring frequently.  Cool.
  2. To prepare and crust and topping:  Cream sugar, and butter until light and fluffy.  Add salt, vanilla, oats and flour.  Mix until blended.  Spread and pat about half the flour mixture in the bottom of a lightly greased shallow pan (7 1/2 x 12-inch or 9 x 13-inch).  Spread filling evenly over all.  Sprinkle remaining flour mixture evenly on top; pat lightly.  Bake at 350F for 25 to 30 minutes or until lightly browned.  Allow to cool in pan.
  3. Cut 4×6 to make 24 large squares or cut 4×12 to make 48 bars to serve as snacks.

Serving Suggestions:  Serve warm with ice cream and drizzle with chocolate syrup.
