Cajun Egg Rolls
- Yield 10-12 servings
- 2 cups leftover or cold Dirty Rice
- 1 package egg roll wraps
- 4 cups peanut oil
- 1 unit sweet & sour sauce (jar)
Heat oil up to 375 degrees in tall pan or fryer. Meanwhile, roll a teaspoonful of the leftover Dirty Rice onto an egg roll wrapper and seal with water…continue until all the Dirty Rice is rolled into the wraps. Fry them for a couple minutes on each side til they turn a nice light brown, crispy color. Serve with theSweet & Sour sauce. These go light lightning; you'll be surprised how quick they are snatched up and you'll end up making more and you'll be asked to make them for the next party too!
