Buttermilk Streusel Pie

  • Yield: 8 to 10 servings

Ingredients

Pie:
2 eggs
3/4cup sugar
2tablespoons all-purpose flour
1 3/4cups buttermilk
1teaspoon vanilla extract
1 (9-inch) unbaked pie shell
Streusel Topping:
1/4cup all-purpose flour
1/3cup light brown sugar
1/2teaspoon ground cinnamon
1tablespoon butter, melted
1teaspoon vanilla extract

Instructions

  1. Preheat oven to 325F.
  2. Combine all ingredients in a mixing bowl and beat until thoroughly mixed. Spoon mixture into pie shell and bake for 30 minutes.
  3. For the topping, mix together remaining ingredients in a small bowl until a crumbly texture is achieved.
  4. Reduce heat to 300F after pie has baked 30 minutes. Garnish pie with streusel topping and bake until pie has set, usually 50-55 minutes.
  5. For the last two minutes, turn oven on broil and watch carefully to keep pie from burning. Let pie cool 20 minutes before serving.
