Buttermilk Fudge Squares

Similar to chocolate sheet cake but thinner.

Ingredients

Cake:
1 cup butter
1/4 cup cocoa
1 cup water
1/2 cup buttermilk
2 large eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
2 cups sugar
2 cups all-purpose flour
1/2 teaspoon salt
-- Chocolate-Buttermilk Frosting (recipe follows)
Chocolate-Buttermilk Frosting:
1 cup butter
1/4 cup cocoa
1/3 cup buttermilk
1 -- (16-ounce) package powdered sugar
1 teaspoon vanilla extract
1/4 cup chopped pecans

Instructions

  1. To prepare the cake:  Cook first 3 ingredients in a small saucpan over low heat, stirring constantly, until butter melts and mixture is smooth; remove from heat.
  2. Beat buttermilk and next 3 ingredients at medium speed with an electric mixer until smooth.  Add butter mixture to buttermilk mixture, beating until blended.
  3. Combine sugar, flour and salt; gradually add to buttermilk mixture, beating until blended.  Pour into a greased 15×10-inch jellyroll pan.
  4. Bake cake at 350F for 15 to 20 minutes or until set.  Spread Chocolate-Buttermilk Frosting over warm cake.  Cut into squares while warm.  Cool before serving.
  5. To prepare the frosting:  Cook first 3 ingredients in a medium saucepan over medium heat, stirring constantly, until butter melts and mixture is smooth.  Remove from heat; stir in powdered sugar, vanilla and pecans.
