Busy Day Chicken and Rice
- Yield 6-8 servings
- 2 cups white rice
- 1 package chicken noodle soup mix
- 1 package dry onion soup mix
- 4 cups warm water
- 1 whole chicken sectioned, or ~ 3 lbs favorite part (with skin is best)
- 1/2 teaspoon seasoned salt (or paprika)
Heat oven to 325 F.
Spray a 9×13 glass baking dish with baking spray, and add the rice. Crunch up the noodles in the chicken noodle soup, then dump it and the onion soup into the water and stir to dissolve. Pour over rice. Lay chicken parts in a single layer over rice (they will be partially submerged). Sprinkle the chicken with the seasoned salt/paprika. Bake approximately 1 hour, until chicken is done (165 F) and rice is cooked. Enjoy!
Note: If your chicken did not entirely cover the surface of the rice you may want to cover it with foil the last 15 minutes or the rice may be dry at the surface. If you choose to use skinless chicken, cover with foil the entire time and expect it to get done in 45-50 minutes.
