Broccoli Bisque

  • Yield 8 servings


1 1/2 pounds fresh broccoli, trimmed and cut up
4 cups chicken broth
1 medium oniion, quartered
2 tablespoons butter
1 teaspoon salt
1 dash pepper
2 teaspoons curry powder
2 tablespoons fresh lime juice


Place broccoli in large pot.  Add broth, onion, butter, salt and pepper and curry powder.  Bring to boil.  Reduce heat and simmer for 8 tp 12 minutes, until broccoli is tender.  Blend with immersible blender or place 2 cups at a time in blender.  Be careful as this is very hot!  Stir in lime juice.  Refrigerare for at least 4 hours.  Garnish with a dollop of sour cream and a sprinkle of chives.  Enjoy!
