BOILED BEEF AND NOODLES W/MASHED POTATOES

Ingredients
- 2-3 pounds LEAN BEEF CHUCK OR ROUND ROAST
- 1-2 quart LOWER SODIUM BEEF BROTH
- 1 small ONION-CHOPPED
- 1 tablespoon WORCESTERSHIRE
- 16 ounces KLUSKE NOODLES OR SIMILAR
- 3 large POTATOES
Instructions
PLACE BEEF IN LARGE STOCK POT OR DUTCH OVEN . COVER WITH BEEF BROTH. ADD WORCESTERSHIRE. ADD ONION. BRING TO BOIL-REDUCE HEAT COVER AND SIMMER FOR THREE HOURS. ADD MORE BEEF BROTH AS NECESSARY. REMOVE BEEF-CUT INTO BITE SIZE PIECES OR SHRED . RETURN TO POT. ADD NOODLES. COOK 15 MIN MORE. BOIL DICED POTATOES AND MASH WITH NO FAT SOUR CREAM(SUBSTITUTE FOR BUTTER) AND 1%MILK. SALT AND PEPPER TO TASTE. PLACE BEEF NOODLE MIXTURE OVER MASHED POTATOES.
