Blueberry-Orange Nut Bread

  • Yield 12 pieces

This delicious breakfast bread is full of fresh blueberries and nuts.


3 cups sifted flour
3/4 cup granulated sugar
3 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
3 -- eggs
1/2 cup milk
1/2 cup butter, melted
1 tablespoon grated orange peel
2/3 cup orange juice
1 cup fresh or frozen blueberries
1/2 cup chopped walnuts


  1. Sift together flour, sugar, baking powder, baking soda and salt.  Beat together eggs, milk, melted butter, orange peel, and juice.  Stir liquid ingredients into dry ingredients just until moistened.  Fold in blueberries and nuts.  Pour into greased 5x9x3-inch loaf pan and bake at 350F for 60 to 70 minutes.  Remove from pan to cool.  Wrap in foil to store.
