BLUEBERRY CRISP

  • Yield: 8 servings

Ingredients

4cups Fresh or Frozen Blueberries
1/2cup Sugar
2tablespoons Cornstarch
2tablespoons Lemon Juice
1/2cup Oatmeal
1/2cup All-Purpose Flour
1/2cup Packed Brown Sugar
2tablespoons Chopped Toasted Walnuts
6tablespoons Margarine or Butter

Instructions

Preheat oven to 375 degrees.  Coat an 8 by 12 inch pan with nonstick spray.  In a large bowl, mix the blueberries, sugar, cornstarch and lemon juice. Spoon into pan.  In the same bowl, mix the oats, flour brown sugar and walnuts.  With a fork or pastry blender, cut in the margarie or butter until the mixture resembles cornmeal.  Sprinkle over the berry mixture.  Bake for 45 minutes or until lightly browned and bubbling.  Makes 8 servings. Serve warm or cold  with ice cream or whipped topping.
