Black bean/ Peach Couscous

  • Yield 4-6 servings


1 cup couscous
1 1/4 cups water
1 (15 oz) can black beans
1/2 teaspoon cumin
1 cup corn kernals
1/2 cup red onion , finely chopped
1/4 cup fresh cilantro, minced
1 cup peeled and diced fresh peaches
1 -- jalepeno, minced
3 tablespoons roasted garlic oil
3 1/2 tablespoons freshly squeezed lime juice


Place couscous and cumin in a large heatproof bowl.  and our  boiling water on top. Cover tightly and let sit for about 10 minutes. Fluff up with a fork. Toss in black beans, corn, red onion, peaches, cilantro, and jalapeno. Mix in oil and lime juice. Chill before serving.
