Black Bean Mole Coconut Burger

  • Yield 6 to 8 servings

Healthy black bean burgers with a sweet twist: coconut and a touch of cocoa powder.

Ingredients

1 can refried black beans
1 -- egg
3 tablespoons chia + ground flax mixed
3 tablespoons rolled oats
3 tablespoons whole-wheat flour
1 tablespoon coconut
1 tablespoon cocoa powder

Instructions

  1. Mix all ingredients in a bowl.
  2. Form into 6-8 patties, depending on the size you’d like. They will be STICKY!
  3. Dip in a shallow bowl filled with rolled oats and more coconut.
  4. Pan-sear in a medium skillet with a drizzle of oil until patties begin to brown.
