Black Bean Hummus with Tomato
- Yield 12 servings
This healthy black bean dip makes a great appetizer.
- 1 -- (16-ounce) can black beans, drained
- 1 -- garlic clove
- 1/4 cup cilantro leaves
- 2 tablespoons tomato paste
- -- Juice of 1/2 lime
- 2 tablespoons cumin
- 1 teaspoon salt
- 1/2 cup olive oil
- -- Chopped green onions, chopped tomatoes or sour cream
- -- Tortilla chips
- Combine the beans, garlic, cilantro, tomato paste, lime juice, cumin and salt in a food processor container and process until smooth. Add the olive oil gradually, processing constantly until well mixed. Spoon into a serving bowl and garnish with green onions, tomatoes or sour cream. Serve with tortilla chips.
