Black Bean and Corn Salad with Cilantro

  • Yield 8 servings

Ingredients

1 can (15-ounce) can black beans
1 cup corn kernels
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1 green onion, diced
1/4 cup chopped cilantro
1 tablespoon chili powder
1 tablespoon cumin
2 tablespoons lime juice

Instructions

  1. Drain and rinse black beans. Mix all ingredients. Heat to warm. Adjust seasonings to taste. Add salt and pepper if desired. Can be served warm or cool.
