Black bean bell peppers

4 large bell peppers
1 cup black beans
.5 cup corn
.5 pound ground turkey
1 cup salsa to taste
4 tablespoons shredded cheddar
1 cup brown rice
2 tablespoons fresh cilantro


Mix cooked ground turkey and rice with other ingedients, leaving out the cheese. Remove tops and seeds from peppers, blanche in boiling water. In a baking pan, place peppers filled with black bean mix. Pour a small amount of water into the pan outside iof the peppers and place in a 350 degree oven for 30 mins. Add cheese to tops of each pepper after 15 mins.

Additional stuffing mixture can be served along side the peppers.
