Beat eggs and sugar; add oil mixture and beat well. Add flour, cinnamon, soda, baking powder and salt. Fold in pineapple, beets, cottage cheese, walnuts, coconut, and vanilla. Bake in greased and floured 9 x 13 pan at 350 degrees about 45 – 50 minutes or until cake tests done. Frosting: Mix cream cheese and butter until blended; add powdered sugar in intervals; add vanilla. Frost cake, sprinkle with chopped walnuts.
