Beet Cake

  • Yield 12 servings


1 cup oil
1/2 cup butter or margarine
3 -- eggs
2 cups sugar
2 1/2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1 cup drained crushed pineapple
1 cup diced beets, undrained
1/2 cup cottage cheese
1 cup chopped walnuts
1 cup coconut
2 teaspoons vanilla
8 ounces softened cream cheese
1/4 cup butter or margarine, softened
1 box powdered sugar
1 teaspoon vanilla
1 cup chopped walnuts


Melt together oil and butter.  Beat eggs and sugar; add oil mixture and beat well.  Add flour, cinnamon, soda, baking powder and salt.  Fold in pineapple, beets, cottage cheese, walnuts, coconut, and vanilla.  Bake in greased and floured 9 x 13 pan at 350 degrees about 45 – 50 minutes or until cake tests done. 

Frosting: Mix cream cheese and butter until blended; add powdered sugar in intervals; add vanilla.  Frost cake, sprinkle with chopped walnuts.
