Beefy Jamaican Stir-Fry

If you like very spicy dishes, give this unusual beef dish a try!
Ingredients
- 1 pound lean flank steak
- 1/4 cup rum
- 1 tablespoon Dijon mustard
- 1 teaspoon cornstarch
- 1 teaspoon minced garlic
- 1 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground allspice
- dash ground cinnamon
- dash ground nutmeg
- 1 teaspoon sugar
- 1 -- green bell pepper, seeded and cut into julienne strips
- 1/2 cup sliced green onions
- 1 cup shredded peeled carrots
- 1 cup coarsely chopped tomato
- 1 cup chopped zucchini
- 4 cups cooked rice
Instructions
- Trim any fat from flank steak. Slice steak diagonally across the grain into 1/4-inch-wide strips.
- Combine rum, mustard, conrstarch, garlic, thyme, cayenne, allspice, cinnamon, nutmeg and sugar in a small bowl; stir well and set aside.
- Coat a large skillet with nonstick cooking spray and heat over medium-high heat. Add steak and stir-fry 5 minutes, or until browned. Remove from skillet; set aside. Coat skillet again with nonstick cooking spray and add green pepper, green onions, carrots, tomato and zucchini; saute over medium-high heat 3 minutes. Return steak and rum mixture to pan. Stir-fry for 1 to 2 minutes, until mixture is slightly thickened. Serve steak over rice.
