Beefy Jamaican Stir-Fry

If you like very spicy dishes, give this unusual beef dish a try!


1 pound lean flank steak
1/4 cup rum
1 tablespoon Dijon mustard
1 teaspoon cornstarch
1 teaspoon minced garlic
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1/4 teaspoon ground allspice
dash ground cinnamon
dash ground nutmeg
1 teaspoon sugar
1 green bell pepper, seeded and cut into julienne strips
1/2 cup sliced green onions
1 cup shredded peeled carrots
1 cup coarsely chopped tomato
1 cup chopped zucchini
4 cups cooked rice


  1. Trim any fat from flank steak. Slice steak diagonally across the grain into 1/4-inch-wide strips.
  2. Combine rum, mustard, conrstarch, garlic, thyme, cayenne, allspice, cinnamon, nutmeg and sugar in a small bowl; stir well and set aside.
  3. Coat a large skillet with nonstick cooking spray and heat over medium-high heat. Add steak and stir-fry 5 minutes, or until browned.  Remove from skillet; set aside. Coat skillet again with nonstick cooking spray and add green pepper, green onions, carrots, tomato and zucchini; saute over medium-high heat 3 minutes. Return steak and rum mixture to pan. Stir-fry for 1 to 2 minutes, until mixture is slightly thickened. Serve steak over rice.
