PrintEmail Ingredients 1 pound lean flank steak1/4 cup rum1 tablespoon Dijon mustard1 teaspoon cornstarch1 teaspoon minced garlic1 teaspoon dried thyme1/4 teaspoon cayenne pepper1/4 teaspoon ground allspice dash ground cinnamon dash ground nutmeg1 teaspoon sugar1 green bell pepper, seeded and cut into julienne strips1/2 cup sliced green onions1 cup shredded peeled carrots1 cup coarsely chopped tomato1 cup chopped zucchini4 cups cooked rice Instructions Trim any fat from flank steak. Slice steak diagonally across the grain into 1/4-inch-wide strips. Combine rum, mustard, conrstarch, garlic, thyme, cayenne, allspice, cinnamon, nutmeg and sugar in a small bowl; stir well and set aside. Coat a large skillet with nonstick cooking spray and heat over medium-high heat. Add steak and stir-fry 5 minutes, or until browned. Remove from skillet; set aside. Coat skillet again with nonstick cooking spray and add green pepper, green onions, carrots, tomato and zucchini; saute over medium-high heat 3 minutes. Return steak and rum mixture to pan. Stir-fry for 1 to 2 minutes, until mixture is slightly thickened. Serve steak over rice.
