Beef and Vegetable Skewers

Ingredients
- 2tablespoons reduced-sodium soy sauce
- 1/2cup fat-free Italian dressing
- 1/2cup red cooking wine
- 1tablespoon olive oil
- 1tablespoon cider vinegar
- 1/2cup water
- 1whole bay leaf
- 1teaspoon minced garlic
- 1/2teaspoon black pepper
- 1teaspoon rosemary
- 1teaspoon chopped parsley
- 1/2teaspoon sugar
- 1/2teaspoon thyme
- 1 1/4pounds 1 inch cubed beef tenderloin
- 1/2cup red onion cut into 1 inch cubes
- 1/2cup green pepper cut into 1 inch cubes
- 1/2cup red pepper cut into 1 inch cubes
- 1/2cup mushrooms
- 1package Skewers
Instructions
- Combine first 13 ingredients (soy sauce through thyme) and mix well.
- Place on skewers in the following order: 1 piece of meat, 1 red onion, 1 green pepper, 1 meat, 1 red pepper, and 1 mushroom. Repeat for remaining meat and vegetables.
- Place skewers in dish and cover with marinade for minimum of 4 hours.
- Prepare grill, using cooking spray and grill meat for 8-10 minutes, until the meat reaches an internal temperature of 160°F.
