Basmati Rice with Cilantro and Lime

  • Yield: 4 servings


1cup uncooked basmati rice
1 1/2cups water
pinch salt, plus more to taste
1tablespoon grated lime zest or 1 teaspoon dried orange peel spice
1medium bundh of fresh cilantro, chopped (1/2 to 3/4 cup)
6 to 8 scallions, sliced thinly
2tablespoons extra-virgin olive oil
Juice of 1 lime
Freshly ground black pepper, to taste


  1. Place rice and water in a saucepan with a pinch of salt. Bring to a boil over high heat. Reduce heat, cover and simmer 20 minutes. Remove from burner and let sit, covered and undisturbed, 10 minutes so it can finish absorbing water.
  2. Remove lid and add zest, cilantro, scallions, oil, lime juice, salt and pepper. Combine well and serve.
