PrintEmail Ingredients 3 -- ripe bananas1 -- egg, beaten2/3 cup sugar2 tablespoons light molasses2 tablespoons melted shortening2 cups sifted flour1 teaspoon baking powder1 teaspoon baking soda1/2 teaspoon salt1 cup chopped walnuts Instructions Mash bananas until no lumps remain. Add unbeaten egg. Mix well. Beat in sugar, molasses and shortening. Mix and sift flour, baking powder, baking soda, and salt. Add to banana-egg mixture. Stir in walnuts. Bake an greased loaf pan (9x5x3-inches) in moderate oven, 325F, for about 1 hour. Note: Banana bread is like all quick breads and muffins. It doesn't like beating. Once you begin to add the dry ingredients, stir, do not beat. Stir only enough to blend. The texture will reward you.
