Banana Molasses Bread

  • Yield: 10 to 12 servings


3-- ripe bananas
1-- egg, beaten
2/3cup sugar
2tablespoons light molasses
2tablespoons melted shortening
2cups sifted flour
1teaspoon baking powder
1teaspoon baking soda
1/2teaspoon salt
1cup chopped walnuts


  1. Mash bananas until no lumps remain.  Add unbeaten egg.  Mix well.  Beat in sugar, molasses and shortening.  Mix and sift flour, baking powder, baking soda, and salt.  Add to banana-egg mixture.  Stir in walnuts.  Bake an greased loaf pan (9x5x3-inches) in moderate oven, 325F, for about 1 hour.

Note:  Banana bread is like all quick breads and muffins.  It doesn't like beating.  Once you begin to add the dry ingredients, stir, do not beat.  Stir only enough to blend.  The texture will reward you.
