Reducing everyday balsamic vinegar with a little sugar and some spices transforms it into a rich, luxurious syrup with all the flavor of expensive aged balsamic vinegar. Serve on everything from salad greens and pasta to ice cream and berries.

1 1/2 cups balsamic vinegar
1/2 cup firmly packed brown sugar
2 star anise
2 sticks cinnamon

  1. Combine all ingredients in saucepan. Simmer until reduced by one-third. Let cool. Makes about 1 cup.
