Baked Sweet Potato Strips

  • Yield 4 to 6 servings


1 1/2 pounds peeled sweet potatoes
1 1/2 teaspoons ground cinnamon
1 tablespoon olive oil


  1. Preheat oven to 450F.
  2. Cut the potatoes in half-length wise and then cut into matchsticks about ½ inch thick.
  3. Toss potatoes in cinnamon and olive oil.  Place on a baking sheet coated with non-fat cooking spray and bake for 25 to 30 minutes or until potatoes are soft but crisp.
