Baja Tacos

  • Yield: 4-6 servings


1can organic black beans, drained
1can organic sweet corn, drained
1-- red onion, diced
1-- medium tomato, diced
1-- jalapeno pepper, diced; with seeds if you like heat, without if you don't
2tablespoons lime juice
1tablespoon olive oil
2tablespoons cilantro, diced
1dash hot sauce
1dash salt
1dash black pepper


Add all ingredients to a large bowl.  Stir to combine.  You can eat right away, but this is better after being in the fridge for a day or two.
