Awesome Apple Snack Cake

  • Yield 8 to 10 servings

Ingredients

1 1/2 cups whole wheat flour
3 tablespoons bran
1 1/2 teaspoons baking soda
3/4 teaspoon cinnamon
3/8 teaspoon nutmeg
3 cups shredded apples
1 cup honey
3/8 cup safflower oil
3/4 cup nuts
2 medium eggs
3/4 teaspoon vanilla

Instructions

  1. Combine flour, bran,baking soda, cinnamon and nutmeg
  2. Stir in honey, oil and eggs
  3. Add vanilla,apples and nuts; mix well.
  4. Bake at 350F for 35 min.
