Awesome Apple Snack Cake
- Yield 8-10 servings
A perfect snack for after school — especially when made with fresh fall apples.
Ingredients
- 1 1/2 cups Whole Wheat Flour
- 3 tablespoons Bran
- 1 1/2 teaspoons Baking Soda
- 3/4 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg
- 3 cups Shredded Apples
- 1 1/8 cups Honey
- 3/8 cup Safflower oil
- 3/4 cup Nuts (optional)
- 2 medium Eggs, well beaten
- 3/4 teaspoon Vanilla
Instructions
- Combine dry ingredients.
- Stir in honey, oil and eggs.
- Add vanilla, then apples and nuts (optional).
- Mix well and put in greased 9 x 13 inch pan.
- Bake at 350 for 35 minutes or until it tests done.
