Awesome Apple Snack Cake

  • Yield 8-10 servings

A perfect snack for after school — especially when made with fresh fall apples.

Ingredients

1 1/2 cups Whole Wheat Flour
3 tablespoons Bran
1 1/2 teaspoons Baking Soda
3/4 teaspoon Cinnamon
1/4 teaspoon Nutmeg
3 cups Shredded Apples
1 1/8 cups Honey
3/8 cup Safflower oil
3/4 cup Nuts (optional)
2 medium Eggs, well beaten
3/4 teaspoon Vanilla

Instructions

  1. Combine dry ingredients.
  2. Stir in honey, oil and eggs.
  3. Add vanilla, then apples and nuts (optional).
  4. Mix well and put in greased 9 x 13 inch pan.
  5. Bake at 350 for 35 minutes or until it tests done.
