Avocado Pineapple Salsa

Serve this creamy, fruity salsa with grilled tofu or any favorite protein, grilled vegetables, rice or beans.


1 (7-ounce) can or jar prepared Mexican green salsa
1 ripe avocado, peeled, pitted and diced
1 cup chopped fresh pineapple
1/4 medium red onion, chopped
1/2 medium tomato, chopped
3 tablespoons minced cilantro
Juice of 1 lime
pinch kosher salt


  1. Combine all ingredients well in a nonreactive large mixing bowl.
