Avocado Pineapple Salsa
- Yield 6 to 8 servings
Serve this creamy, fruity salsa with grilled tofu or any favorite protein, grilled vegetables, rice or beans.
- 1 (7-ounce) can or jar prepared Mexican green salsa
- 1 ripe avocado, peeled, pitted and diced
- 1 cup chopped fresh pineapple
- 1/4 medium red onion, chopped
- 1/2 medium tomato, chopped
- 3 tablespoons minced cilantro
- Juice of 1 lime
- pinch kosher salt
- Combine all ingredients well in a nonreactive large mixing bowl.
